Dual phase rising allows for healthier preparation of breads like sourdough and can also be used to make and maintain your own starter culture. The kneading process is faster in the Sana Smart Bread Maker because of its powerful motor. As well as kneading taking as little as three minutes this also means that the small kneading paddles an be easily removed before baking so the final loaf is more uniform with lass waste than other bread makers. The special glass lids allow for even cooking at lower temperatures by creating a steam effect and can be removed for a final toasting phase. They also increase the versatility in terms of recipe size meaning you can bake any size of loaf from 500g to 1700g.
The fully accessorised ‘exclusive’ version of the Sana Smart Bread Maker comes with 3 included upgrades that are also compatible with the standard model. The dual layer baguette tray allows four small baguette loaves to be made simultaneously instead of the usual single ‘knead and bake’ loaf. This also serves as a support for easier viewing of the fermentation process when using the main upgrade in the exclusive model – the Tempeh making set. This consists of a stainless tray with weighted porous ceramic Tempeh pressing plates and a glass lid. The low temperatures in the fermenting programmes of the Smart Bread Maker allow precise control of the otherwise hit and miss process of safely making Tempeh. Fermentation or culturing makes many plant based foods easier to digest. Tempeh and other fermented legumes are a high protein savoury delicacy preferred by many who follow a plant based diet. The fermentation process pre-digests some of the more difficult to digest ingredients in the soya beans or other legumes, as well as enriching their flavour. The third upgrade with the exclusive model is a multifunctional probe thermometer that has an alarm which enables more precise control of the more precise temperature range needed during delicate fermentation processes like Tempeh, as well as offering an alert as to when the centre of breads or other ingredients have reached a precise level of cooking to prevent loss of nutrition through overheating.
